Golgari Gardens plays several low-toughness threats such as Accursed Marauder (2/1) and the 1/1 Saproling token from Fungal Infection, both of which Gut Shot kills for free while also being able to snipe the deck's few 1-toughness utility pieces. Steel Sabotage is well-positioned against their artifact package of Ichor Wellspring, Nihil Spellbomb, and Tithing Blade, letting you either counter these spells or bounce a problematic artifact. Dispel loses some value since Golgari's key spells like Cast Down and Snuff Out are instants but the deck also leans on sorcery-speed removal and creatures that Dispel can't touch, so trim it for more proactive answers. Watch out for their sacrifice synergies with Eviscerator's Insight and Fanatical Offering, and keep Counterspell up for their bigger threats like Troll of Khazad-dum.
