Beanstalk Control plays almost no creatures, so our removal spells are largely dead and get cut for proactive disruption. Null Rod is strong against their artifact-based engine, shutting off the activated abilities of Lotus Petal, Giant's Boulder, The One Ring, and Expedition Map. Force of Negation can counter The One Ring, Karn, or Trinisphere on their turn for free. Bilbo stays in as proactive pressure, since the opponent has no sweepers mainboard and few ways to deal with creatures.
