Beanstalk Control's manabase is almost entirely Urza's Tower/Mine/Power Plant and other nonbasic lands, so Blood Moon can shut off most of their mana production and stop The One Ring, Karn, and Ugin from coming online. Monastery Mentor gives you a proactive clock that punishes their slow, artifact-based gameplan since they have little early interaction for creatures. Spell Pierce is weak since much of their key threats are played for colorless mana they can generate easily, and Wrath of the Skies is a dead card against a deck with few creatures or cheap permanents to sweep. Keep Prismatic Ending and Force of Negation to fight their key noncreature permanents like The One Ring and Trinisphere.
