Annul counters their artifact spells outright, hitting key pieces like Simulacrum Synthesizer, Candy Trail, or Pinnacle Starcage before they resolve. Duress comes in because nearly all of their deck is noncreature and nonland, so it can take a key artifact or a sweeper like Day of Judgment before it matters. Torpor Orb stays in the sideboard: it only stops abilities that trigger from creatures entering, and their deck has almost no creatures, so it would do little against them while also shutting off our own Dream Beavers, Floodpits Drowner and Spyglass Siren triggers. Shoot the Sheriff has very few creature targets in a deck full of artifacts and lands, so it comes out. Spell Snare has limited two-mana-value targets here, so we trim a copy to make room for Duress and Annul.
